Ingredients

2 cups old-fashioned rolled oats

2 cups milk (dairy or non-dairy)

¼ cup pure maple syrup (or honey)

2 tsp vanilla extract

2 medium apples, diced (peeled if desired)

½ cup chopped nuts (optional: pecans or walnuts)

½ cup raisins or dried cranberries (optional)
Instructions

Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.

In a large bowl, mix oats, cinnamon, baking powder, and salt.

In another bowl, whisk milk, eggs, maple syrup, and vanilla.

Stir wet ingredients into dry until combined. Fold in apples, nuts, and dried fruit if using.

Pour mixture into prepared dish.

Bake for 35–40 minutes, until set and lightly golden.
